Tasting Notes : Chocolate core with bittersweet grapefruit, balanced with dried apricot and lingering notes of walnuts and toasted bread

Varieties : Criollo (DR1) and selected Trinitario (ICS13 / 60, TSH858) hybrids

Fermentation : 2-tiered wooden boxes (5 days / 24h-24h-24h-24h-24h)

Drying : Direct/indirect sun-dried on open concrete patios
(6-8 days) and protected with plastic covers from rain, sunlight and during nighttime

Harvest Season : May – Aug (Main Crop) / Sep – Oct (Mid Crop)

The Gaura estate is a family owned and operated 815-hectare mixed crop plantation established in 1990 with the goal to create a best-in-class plantation in order to improve the livelihoods of the rural community.

The farm currently employs around 60 full-time staff who live on the plantation and have access to a free school for their children own land for food crops. During the harvest season the farm employs an additional 150 workers from the surrounding villages.

In partnership with ICCRI the team operate a national cacao seedling project for farmers across the region.
